CARAMEL CUSTARD




INGREDIENTS:

1.    3 eggs
2.   12 Tbs. sugar for the custard (You can use condensed milk instead of sugar, taste for sweetness according to your taste buds)
3.   2 cups milk
4.   1 tsp. vanilla essence
5.  Tbs. sugar for the caramel
6. 1 & 1/2 cups of sugar for making the sugar shards (OPTIONAL,JUST USED TO DECORATE)

METHOD FOR THE CARAMEL CUSTARD

1.    Boil the milk with the sugar; keep stirring till the sugar dissolves completely. Let it cool.
2.   Beat the eggs till it is double in size. Add the vanilla essence.
3.   Take aluminum tin used to make custards or flans. Add 5 Tbs. of sugar.  Put it directly on flame. Let it caramelize till it turns dark golden brown. Use tongs to tilt the tin so that the caramel sauce coats the sides of the tin.
4.   Combine and fold the eggs into the milk, stir very gently. Pour this mixture to the tin.
5.   Cover with tin foil. Put the tin in a steamer and let it steam for atleast 30 to 40 minutes till it sets perfectly. You can test by inserting a fork, it should come out clean. Let it cool and refrigerate till chilled.

METHOD FOR MAKING THE SUGAR SHARDS (OPTIONAL)

1.    Lightly oil a 12-inch square of tin foil.
2.   In a heavy saucepan boil 1 & 1/2 cups sugar and 1/4 cup water over moderate heat, stirring, until sugar is dissolved.
3.   Boil syrup without stirring, until pale golden. Continue cooking syrup without stirring, swirling the pan, until deep golden.
4.   Immediately pour caramel onto the foil and cool completely for about 20 minutes. Break caramel into shards.
5.   Decorate the caramel custard with these shards.
